I record all my vinyl to wav at 44,100 Hz, 16 Bit, Stereo PCM , you may have to adjust the volume as some records are pressed at a lower volume then others.
Hope that helps

Well you dont want to clip the sound, so test the levels out in the middle of track or somewhere where there is alot going on, and get it close to 0 , then record.

As far as pops and crackles I usually just edit them out after, by zooming in really far and deleting them.

You should aim to have the mixer output at -2 to -6dB and the same on the input of the soundcard.

As for removing the pops and clicks, either edit it manually or use a plugin like Waves XNoise.

You might also want to eliminate the DC offset which will remove the 50Hz rumble from the bottom of the recording.

Top tip from me is to record at 24bit leaving yourself plenty of head room as per Tim's post, then normalize to 16 bit. This will allow you to make full use of the available headroom at 16 bit, whereas if you record at 16 bit in the first place you will probably only use about 14 bits.
