Global Gathering a few years ago were supposed to have a spray fountain with 3D images projected in it.

Someone already mentioned the parachute at Whirlygig. Having a sheet blowing above the dancefloor with the lights above it gives and excellent effect!

The old Pendragon.

Also been to a warehouse party in hackney where they had these radio controlled "UFOs" flying about the room as well.

And when they used to release the big rave balloons at the Fridge near the end of the night.

the inflatable from the Pink Floyd tour at some Antiworld thing at Ally Pally. also nthe dancers at the Tidy Weekender we went to. 999 times out of 1000 dancers are crap but these were ACE

Many years ago I was at a club and they had magicians wandering around doing various card tricks / street magic type stuff. Great fun and even better watching the reactions of munted people who were utterly flummoxed.
